Whatever the leftover, as long as it’s green, it can go in this delicious Christmas leftover loaf! This Nici Wickes recipe is the perfect way to use up those lingering beans, peas and asparagus

Ingredients

Method

1.Preheat oven to 180°C. Line a standard loaf tin with baking paper.
2.Combine the cooked greens (save some asparagus spears or beans to decorate top of loaf), spring onion, herbs, flour, eggs, cheese, olive oil, salt and pepper in a bowl. Mix thoroughly, then scrape into lined loaf tin. Place the asparagus or beans on top, then sprinkle over the feta and add a drizzle of oil.
3.Bake for 40-50 minutes until a skewer comes out clean. Leave to cool for 10-15 minutes before turning out to cool.
4.Slice thickly to serve.
  • Makes 8-10 slices. – Feel free to break the green theme and add some chopped up leftover Christmas ham.
