Christmas Eton mess
This is an easy dessert to put together using up any leftover Christmas cake or pudding, fresh fruit that’s ready to be eaten and meringues. Plus, it’s super-yum!

Ingredients
- 400 millilitre whipped cream
- 2 cup roughly crumbed christmas cake or pudding
- 2 cup meringue pieces
- 2 cup raspberries or cut strawberries and any other summer fruit that needs using up (we used some pawpaw for a tropical feel)
- small handful mint leaves
Method
- 1In a large bowl, gently fold everything, except the mint leaves, together. Either serve in individual pretty glasses or bowls, or let everyone help themselves from a large bowl. Garnish with fresh mint leaves.
Notes
• I must admit, I've been known to use the Christmas cake not eaten from the previous year. • Meringues are so easy to make, just beat together 1 egg white, 1 tsp vinegar, 1/2 cup sugar and 1 tsp water until the sugar has dissolved and the mixture is very stiff. Drop spoonfuls onto a tray covered in baking paper and place in a 150°C oven until the meringues are dry. They will keep for some time in a sealed container for when you wish to use them. They're always handy to have on hand.
