Ingredients
Chorizo with brown rice and beans
- 1 tablespoon vegetable or olive oil
- 3 chorizo sausages, thinly sliced
- 1 large red onion, halved, sliced
- 2 cloves garlic, crushed
- 1 large red capsicum, thinly sliced
- 2 teaspoon sweet paprika
- 300 gram green beans, cut into thirds, diagonally
- 2 250g packets microwave brown rice
- 420 gram can cannellini beans, rinsed
- 1/2 cup flat-leaf parsley leaves
- lemon wedges, to serve
Method
Chorizo with brown rice and beans
- 1Heat half the oil in a large frying pan over moderately high heat. Add chorizo; cook and stir for 4 minutes or until golden. Remove from pan. Heat remaining oil in pan. Add onion, garlic, capsicum and paprika; cook and stir for 5 minutes or until soft.
- 2Boil, steam or microwave green beans until cooked. Heat rice as packet directs. Add rice, green beans and cannellini beans to pan; cook and stir until heated. Sprinkle with parsley. Serve with lemon wedges.
