Ingredients
Chorizo tart in a frying pan
- 375 gram block frozen puff pastry, thawed
- 1 tablespoon vegetable or olive oil
- 1/4 cup pizza sauce
- 1/2 cup grated pizza cheese
- 1/2 small red onion, thinly sliced
- 1/2 small red capsicum, thinly sliced
- 1 cured chorizo sausage, thinly sliced
- 70 gram fresh ricotta, crumbled
- 1/4 cup small fresh basil leaves
Method
Chorizo tart in a frying pan
- 1Preheat oven to 200°C (180°C fan-forced). Roll out pastry on a lightly floured surface, or non-stick baking paper, to a 28cm round.
- 2Heat oil in a 26cm (base measurement) ovenproof frying pan over moderate heat; swirl to coat surface. Place pastry in pan to cover base and a little up the sides. Cook for 5 minutes or until base is golden and crisp. Transfer to oven. Bake for 5 minutes or until top is lightly golden.
- 3Spread pizza sauce over pastry. Top with pizza cheese, onion, capsicum, chorizo and ricotta. Bake for 12 minutes or until tart is golden. Serve tart topped with basil.
Notes
Try salami instead of chorizo. To make a packet of microwave rice go further, use it in stir-fries and salads or with vegies.
