Preheat oven to 200°C (180°C fan-forced). Roll out pastry on a lightly floured surface, or non-stick baking paper, to a 28cm round.
  • 2
Heat oil in a 26cm (base measurement) ovenproof frying pan over moderate heat; swirl to coat surface. Place pastry in pan to cover base and a little up the sides. Cook for 5 minutes or until base is golden and crisp. Transfer to oven. Bake for 5 minutes or until top is lightly golden.
  • 3
Spread pizza sauce over pastry. Top with pizza cheese, onion, capsicum, chorizo and ricotta. Bake for 12 minutes or until tart is golden. Serve tart topped with basil.

Try salami instead of chorizo. To make a packet of microwave rice go further, use it in stir-fries and salads or with vegies.
