Method
1.Heat milk and sugar in a saucepan on low, stirring until sugar dissolves.
2.In a small bowl, mix custard powder to a smooth paste with a little of milk mixture. Whisk into remaining milk mixture, stirring constantly.
3.Return to medium heat, stirring, 1-2 minutes, until thickened and bubbling. Reduce heat. Simmer 3 minutes. Whisk in chocolate and eggs. Cool slightly.
4.Stir in cream and brandy, if using. Serve warm poured over pikelets. Top with macadamia nuts and chocolate.
It is important to stir constantly to prevent lumps from forming.
