Ingredients

Chocolate rocky road ice-cream
  • 1 litre (4 cups) chocolate ice-cream
  • 100 gram rocky road, chopped finely
  • 100 gram dark eating (semi-sweet) chocolate, chopped coarsely
  • 1/2 cup (125ml) thickened (heavy) cream
  • 50 gram rocky road, extra, chopped finely

    Place ice-cream in microwave-safe bowl. Microwave on MEDIUM (50%) 30 seconds or until just softened, stir in rocky road. Freeze 10 minutes.

    Meanwhile, stir chocolate and cream in small saucepan over low heat until smooth.

    Serve scoops of rocky road ice-cream drizzled with warm chocolate sauce. Sprinkle with extra rocky road to serve.

Notes

If you can't find rocky road confectionery, use a tub of chocolate rocky road ice-cream instead.
