Ingredients
Chocolate orange cake
- 185 gram unsalted butter, at room temperature, plus 125 g extra
- 1 1/2 cup caster sugar
- 3 eggs, at room temperature
- 1/2 cup self-raising flour
- 1/2 cup plain flour
- 1/3 cup cocoa powder, plus 1/4 cup extra
- 3/4 cup buttermilk
- 1/2 cup english breakfast marmalade
- 1 cup icing sugar
- 2 tablespoon milk
Method
Chocolate orange cake
- 1Preheat oven to 180°C/160°C fan forced. Grease and line base and side of a 20cm (base diameter) round cake pan with baking paper.
- 2Using an electric mixer, beat butter and sugar in a bowl until light and creamy. Add eggs, one by one, beating lightly after each addition. Stir in sifted flours and sifted cocoa powder, then buttermilk, until just combined. Pour mixture into prepared pan; level surface. Bake for 1 hour 5 minutes or until a skewer inserted at centre comes out clean. Cool cake in pan.
- 3Using a large serrated knife, horizontally cut cake into 3 equal layers. Sandwich layers with marmalade. Transfer cake to a serving plate.
- 4Sift icing sugar and extra cocoa powder into a bowl. Add milk and extra butter; using an electric mixer, beat until thick and creamy. Spread icing over top and side of cake. Serve.
