Chocolate marshmallow brownies

This is a great recipe to make with the kids.

  • 150 gram dark chocolate, roughly chopped, or choc buttons
  • 200 gram butter
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 4 eggs
  • 1 cup plain flour
  • 3/4 cup mini marshmallows or halved larger ones
  • icing sugar, for dusting

    Preheat the oven to 180°C. Line a 27cm x 18cm slice tin with baking paper.

    Combine the chocolate, butter, sugar and vanilla in a microwave or heat-proof bowl and heat until melted and smooth. Cool for at least 15 minutes.

    Whisk in the eggs, one at a time, then fold in the flour and three-quarters of the marshmallows.

    Pour into lined tin, sprinkle with remaining marshmallows and bake for 20-25 minutes (test with a skewer – the brownie is done when the top is firm but the centre is still slightly damp).

    Dust with icing sugar and serve with cream or ice cream.
