Method

Chocolate loaf with peanut butter

1.Preheat oven to moderate, 180°C (160°C fan-forced). Grease and line base and sides of a 21 x 10cm (base measurement) loaf pan.
2.Combine butter, sugar and chocolate in a medium saucepan over low heat. Stir until melted and smooth. Add milk; set aside 10 minutes to cool.
3.Add egg and sifted flour; fold in sour cream until combined. Pour into prepared pan; smooth top.
4.Bake 45-50 minutes, or until a skewer inserted in the centre comes out clean. Cool in pan 5 minutes; transfer to a wire rack to cool completely.
5.To make peanut butter icing, using an electric mixer, beat peanut butter and butter in a small bowl until smooth. Stir in sifted icing sugar and milk, in 2 batches, until smooth.
6.Spread icing over top of cooled cake. Sprinkle with chocolate bits and peanuts; press to secure. Serve.
