Chocolate hazelnut flourless muffins
- 125 gram reduced-fat dairy spread
- 2 45g bars sugar-free dark chocolate, chopped
- 1/2 cup low-gi sugar
- 2 tablespoon granulated stevia-based sweetener
- 3 eggs, separated
- 1 3/4 cups hazelnut meal (ground hazelnuts)
- 1/4 cup cocoa powder, sifted, plus 2 teaspoons extra
- 1/4 cup milk
- 45 gram unroasted hazelnuts
Method
Chocolate hazelnut flourless muffins
- 1Preheat oven to 180°C/160°C fan-forced. Line a 12-hole (-cup)muffin tray with paper cases. Placedairy spread and chocolate in a smallsaucepan; cook and stir over low heatfor 2 minutes or until melted and smooth. Stir in sugar and sweetener; mix well.
- 2Add egg yolks; mix well. Stir in hazelnut meal, cocoa and milk; mix until smooth. Using an electric mixer, beat egg whites in a large, clean, dry bowl until soft peaks form. Fold through chocolate mixture until just combined.
- 3Spoon mixture into prepared holes. Top each with 3 hazelnuts; bake for 20 minutes or until a skewer inserted at centre comes out clean. Stand in pan for 5 minutes; transfer to a wire rack.Serve dusted with extra cocoa powder.
