Fudgy chocolate, hazelnut and peach pudding
Chocolate, hazelnuts and peaches combine in this sweet and sticky pudding, which might just become your new go-to. Enjoy as a decadent summer dessert, served with a generous scoop of vanilla ice cream.

Ingredients
- 200 g butter
- 300 g brown sugar
- 1 tsp vanilla essence
- 4 eggs, lightly beaten
- 75 g plain flour
- 50 g cocoa powder
- 450 g peaches, thinly sliced
- 100 g dark chocolate, bits or chunks
- 1/3 cup hazelnuts, chopped or crushed
- Cream or ice cream, to serve
Method
- 1Preheat oven to 190°C. Lightly grease a 20cm x 30cm shallow ovenproof dish.
- 2Melt butter in a saucepan over low heat. Remove from heat; stir in the sugar.
- 3Add the vanilla, then mix in the eggs in increments; beating well after each addition.
- 4Sift over flour and cocoa powder, then mix until thoroughly combined.
- 5Pour into dish, nestle in the peach and scatter with chocolate and nuts.
- 6Bake for 30 minutes, until crusty on the outside but still fudgy in the centre. Serve warm with cream or ice cream.
Notes
Place hazelnuts in a bag and bash with a rolling pin to break them up.
