Ingredients

Chocolate frosted spicy ginger cake
  • 1 cup golden syrup
  • 3/4 cup milk
  • 185 gram butter
  • 1 cup caster sugar
  • 2 eggs
  • 2 1/2 cup plain flour
  • 2 teaspoon ground cinnamon
  • 1 tablespoon ground ginger
  • 1 teaspoon bicarbonate of soda
  • 3/4 cup hot water
Chocolate frosting
  • 100 gram dark chocolate, chopped
  • 125 gram butter
  • 1 1/2 cup icing sugar
  • 1 egg yolk

Method

    Grease a 23cm square slab pan, line base with paper; grease paper. Preheat oven to 160°C.

    Heat golden syrup and milk in saucepan, cool to room temperature.

    Cream butter and sugar in small bowl with electric mixer until light and fluffy. Beat in eggs one at a time until combined. Transfer mixture to large bowl.

    Stir in the sifted dry ingredients with the syrup mixture and water. Pour into prepared pan, bake about 1¼ hours. Stand 10 minutes before turning on to wire rack to cool.

    To make chocolate frosting, melt chocolate over hot water, cool; do not allow to set. Cream butter and sifted icing sugar until light and fluffy, beat in egg yolk and chocolate.

    Top cold cake with chocolate frosting.
