Method

1.Preheat oven to very hot, 220°C. Line base and sides of a 22cm square cake pan with baking paper, allowing ends to overhang.
2.Place pastry sheets on 2 baking trays. Prick all over with a fork and sprinkle evenly with sugar. Bake 12-15 minutes, until golden and puffed. Allow to cool.
3.Meanwhile, in a large saucepan, combine extra sugar, cornflour and cocoa. Gradually whisk in 1 cup milk, to form a thick paste. Then stir in remaining milk and cream, until smooth. Heat on low, stirring constantly until mixture comes to the boil and thickens. Simmer, stirring, 3-4 minutes, until very thick and smooth.
4.Add chocolate and butter to cornflour mixture, stirring on low heat until melted and smooth. Remove from heat and stir in egg-yolks.
5.Trim pastry sheets to fit snugly into the cake pan. Place one sheet in pan, sugar side down. Pour over chocolate mixture, smoothing surface. Top with remaining pastry sheet while still hot, sugar side up. Press gently. Chill until firm. Cut into squares.
