Chocolate, coffee and avocado mousse
Combining the heavenly flavours of chocolate and coffee with the silky smooth texture of avocado, this mousse is a delicious idea for dessert. Whip up a batch for a sweet treat that is ready in just 15 minutes.

Ingredients
- 450 g avocado flesh (about 3 large avocados)
- 1/2 cup cocoa
- 1 tsp vanilla bean paste or extract
- 1/2 cup pure maple syrup
- 1/4 cup cold strong black coffee
- chocolate-coated coffee beans
Method
- 1In a food processor, combine avocado flesh, cocoa, vanilla, maple syrup and coffee. Process until smooth and glossy. You will have to stop and scrape down the sides several times.
- 2Divide between glasses, garnish with chocolate-coated coffee beans, roughly chopped, and serve.
Notes
This dessert can be made a day ahead and kept in the fridge (the coffee flavour develops the longer it is left). As this mousse is quite rich, a little goes a long way!
