Chocolate and orange tea loaf
- 150 gram milk chocolate, finely chopped
- 75 gram unsalted butter, at room temperature
- 1/2 cup (110g) caster sugar
- 3 eggs, at room temperature
- 1/2 cup (75g) self-raising flour, sifted
- 2 teaspoon finely grated orange zest
Method
Chocolate and orange tea loaf
- 1Preheat oven to l80°C or 160°C fan. Grease and line a l9cm x 9cm loaf pan.
- 2Melt 50g of chocolate in a heatproof bowl over a pan of simmering water, stirring often, until melted and smooth. Remove from heat.
- 3Using an electric mixer, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in flour.
- 4Stir one-third of batter into chocolate. Stir rind into remaining batter. Drop alternate spoonfuls of orange and chocolate mixtures in pan. Gently swirl with a knife for marbled effect. Bake for 30 minutes, until a skewer inserted comes out clean. Turn onto a wire rack to cool.
- 5Place remaining chocolate in a heatproof bowl over a pan of simmering water, stirring until melted and smooth. Spread chocolate over cake. Allow to set before slicing.
