Method

Choc ice cream sandwiches

1.Preheat oven to moderate, 180°C. Line two oven trays with baking paper.
2.In a saucepan, melt chocolate and butter together on medium, then cool.
3.In a small bowl of an electric mixer, beat eggs, sugar and vanilla together until thickened. Beat in melted chocolate mixture. Fold in sifted combined flour and baking powder.
4.Dollop tablespoons of mixture onto trays to make 16 rounds, 2cm apart. Bake for 8-10 minutes until cracked on the top. Cool completely on trays.

Ice cream

5.In a large bowl, fold peanut butter and peanuts through softened ice cream. Return to container and freeze until firm.
6.Sandwich 2 cookies together with a generous scoop of ice cream. Drizzle with white chocolate to serve.

If preferred, use a favourite ready-made chocolate cookiefor these.
