Choc cherry french toast
  • 500 gram cherries, pitted, halved lengthwise
  • 1/2 cup caster sugar
  • 2 tablespoon lemon juice
  • 12 slice thick white bread
  • 1/2 cup chocolate hazelnut spread
  • 4 eggs
  • 1/4 cup cream
  • 50 gram butter, chopped
  • icing sugar, to dust

    Combine cherries, sugar and juice in a medium saucepan over moderate heat. Cook and stir until sugar dissolves. Bring to a simmer; simmer for 10 minutes or until cherries are just soft. Remove from heat. Cool.

    Spread 6 bread slices with chocolate hazelnut spread; top with remaining bread slices. Whisk eggs and cream in a large bowl.

    Heat half the butter in a large frying pan over moderately low heat. Dip 3 of the sandwiches into egg mixture; turn to coat evenly. Cook for 10 minutes, turning once, or until golden and cooked. Transfer to serving plates. Cut in half. Repeat with remaining butter, sandwiches and egg mixture. Serve warm French toast with cherry syrup, dusted with icing sugar.
