Choc banana muffins

The unbeatable combination of chocolate and banana is celebrated in these delicious muffins, which are packed full of real chocolate chips. These are great to make with the kids as a weekend treat or lunchbox snack.

Method

1.Preheat oven to 180°C (160°C fan-forced). Line a 12-hole (1/3-cup) muffin tray with paper cases.
2.Sift flour and cocoa into a medium bowl. Stir in sugar. Make a well at centre.
3.Whisk milk, egg, butter and banana in a jug; add to flour mixture. Add chocolate chips; stir until just combined (do not over mix).
4.Spoon mixture into prepared holes. Top each with a banana chip to decorate. Bake 20 minutes, or until a skewer inserted at centre comes out clean.

You will need 2 overripe medium bananas for this recipe. Dried banana chips are in the health food aisle. Do not over mix batter-it will produce flat-topped muffins.
