Chilli, zucchini and lemon pasta
With zest and spice this vegetarian pasta is simple to make but delicious and full of complimentary flavours.

Ingredients
Chilli, zucchini and lemon pasta
- 375 gram spaghetti
- 2 tablespoon olive oil
- 1 onion, chopped
- 1 clove garlic, crushed
- 1/2 teaspoon dried chilli flakes
- 2 zucchini, grated
- 1 lemon, finely grated rind and juice
- 1/3 cup chopped parsley
- 1/3 cup shredded parmesan
Method
Chilli, zucchini and lemon pasta
- 1Cook spaghetti in a large saucepan of boiling water according to pack instructions. Drain well. Return to pan.
- 2Meanwhile, heat oil in a saucepan on medium. Saute onion, garlic and chilli flakes for 5 minutes, until onion is tender.
- 3Add zucchini, lemon and parsley and cook for 2 minutes. Season to taste.
- 4Toss zucchini mixture through pasta until well combined.
- 5Serve pasta topped with parmesan.
Notes
If liked, toss 70g baby rocket leaves through pasta in Step 4.
