Chilli, zucchini and lemon pasta

With zest and spice this vegetarian pasta is simple to make but delicious and full of complimentary flavours.

Ingredients

Chilli, zucchini and lemon pasta
  • 375 gram spaghetti
  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 1/2 teaspoon dried chilli flakes
  • 2 zucchini, grated
  • 1 lemon, finely grated rind and juice
  • 1/3 cup chopped parsley
  • 1/3 cup shredded parmesan

Method

    Cook spaghetti in a large saucepan of boiling water according to pack instructions. Drain well. Return to pan.

    Meanwhile, heat oil in a saucepan on medium. Saute onion, garlic and chilli flakes for 5 minutes, until onion is tender.

    Add zucchini, lemon and parsley and cook for 2 minutes. Season to taste.

    Toss zucchini mixture through pasta until well combined.

    Serve pasta topped with parmesan.

Notes

If liked, toss 70g baby rocket leaves through pasta in Step 4.
