Chilli prawn and spinach pizzas
  • 2 ready-made pizza bases
  • 1 cup grated pizza cheese
  • 1/4 cup olive oil
  • 3 clove garlic, crushed
  • 1 teaspoon chilli flakes
  • 16 green prawns, medium, peeled, deveined, tails on
  • 150 gram packet baby spinach
  • extra-virgin olive oil, to drizzle

    Preheat oven to very hot, 220°C. Place pizza bases on trays. Sprinkle each with a quarter of the cheese.

    In a bowl, combine oil, garlic and chilli. Season to taste. Add prawns, tossing to coat. Place prawns on pizza bases. Sprinkle with remaining cheese. Bake for 8-10 minutes, until golden and crisp.

    Serve topped with spinach leaves and a drizzle of oil.


For added "bite" add 1 sliced birdseye chilli after baking. Makes 2
