Chilli garlic mince with snake beans
- 2 clove garlic, quartered
- 2 long green chillies, chopped coarsely
- 2 small fresh red thai chillies, chopped coarsely
- 500 gram fresh rice noodles
- 1 tablespoon peanut oil
- 600 gram lean beef mince
- 250 gram snake beans, chopped coarsely
- 1 medium (200g) red capsicum, sliced thinly
- 1 1/2 tablespoon hoisin sauce
- 4 green onions (green shallots), sliced thickly
- 2 tablespoon crushed peanuts
Method
Chilli garlic mince with snake beans
- 1Blend or process the garlic and chillies until the mixture is finely chopped.
- 2Add noodles to a large bowl; cover with warm water. Stand for 5 minutes, then loosen noodles with fingers to separate; drain.
- 3Heat half the oil in a large wok or frying pan; stir-fry garlic mixture until fragrant. Add beef mince; stir-fry until cooked through.
- 4Heat remaining oil in a cleaned wok; stir-fry beans and capsicum until tender.
- 5Return beef to wok with sauces, noodles and onion; stir-fry until hot. Sprinkle over nuts.
Notes
Not suitable to freeze. Not suitable to microwave.
