Method

1.Preheat oven to 180°C (160°C fan-forced). Grease a 1.5-litre (6-cup) oven-proof dish.
2.Heat oil in a medium frying pan over moderate heat. Add onion, garlic, cumin and spice mix; cook and stir for 3 minutes or until onion has softened.
3.Add mince; cook, stirring with a wooden spoon to break up lumps, for 5 minutes or until browned. Add tomato, beans, corn, tomato paste and stock; simmer, uncovered, for 10 minutes or until mixture thickens slightly.
4.Pour mince mixture into prepared dish. Sprinkle with halt the cheese. Bake for 10-12 minutes or until golden and bubbly.
5.Arrange corn chips on a baking tray; sprinkle with remaining cheese. Bake for 5-8 minutes or until cheese melts. Serve chilli con carne with corn chips.

Use chicken or beef mince instead of pork. You can make mince mixture ahead; keep, covered, in the fridge. Assemble just before serving. Serve with sour cream and bought guacamole.
