Method

1.Preheat oven to 220°C (200°C fan-forced). Heat oil in a medium saucepan over moderate heat. Add onion, capsicum and garlic; cook and stir for 5 minutes or until softened.
2.Add mince: cook, stirring with a wooden spoon to break up lumps, for 5 minutes or until browned. Add spices; cook and stir for 30 seconds or until fragrant. Add tomato paste and passata; bring to the boil. Reduce heat. Simmer, uncovered, for 10 minutes. Add sugar and beans. Simmer for 10 minutes or until sauce thickens slightly.
3.Place wedges on a baking tray. Bake for 25 minutes or until golden.
4.Place wedges on 2 shallow ovenproof plates; spoon chilli con carne mixture over wedges. Top with cheese. Bake for 4-5 minutes or until cheese melts. Top with sour cream, avocadoand coriander. Serve.

Make chilli con carne mixture up to 3 days ahead; reheat. Bake wedges just before serving.
