Method

1.Start by making the chilli beef. You can do this in advance then just reheat when required. This recipe makes about 500g; freeze any leftovers and use for tacos or nachos.
2.Place a large frying pan on a medium heat. When the pan is hot, add the oil and leave for 1 minute before adding the onion. Cook for 2–3 minutes or until nicely softened then turn up the heat and add the mince. Cook for 3–4 minutes, stirring occasionally.
3.Add ketchup, chilli flakes, paprika and mustard. Lower the heat and simmer for 15 minutes then season to taste and set aside until required.
4.In the meantime, preheat a barbecue grill or griddle pan on medium-high heat (or use a frying pan). Place cabbage in a bowl, add lemon juice and oil and mix thoroughly. Gently brush the grill or pan with a little oil, place the split hot dog buns face down and toast for 30 seconds. Remove buns and place frankfurters on grill or in pan and cook for 1–2 minutes on each side, depending on thickness.
5.To serve, place some cabbage inside each bun, put a frankfurter on top and add some chilli beef. Finish with ketchup, mustard and grated cheese.
