Chilli beef stir-fry

Ingredients
Chilli beef stir-fry
- 450 gram packet fresh hokkien noodles
- 1/4 cup (60ml) peanut oil
- 700 gram piece beef rump steak, sliced thinly
- 300 gram green beans, cut into 5cm lengths
- 1 clove garlic, chopped coarsely
- 2 fresh long red chillies, sliced
- 1/3 cup (100g) thai chilli jam stir-fry paste
- 350 gram baby bok choy, quartered
- 1/4 cup (60ml) beef stock
- 4 green onions, sliced thinly
- 1/3 cup fresh mint leaves, firmly packed
Method
Chilli beef stir-fry
- 1Place noodles in large heatproof bowl, cover with boiling water, separate noodles with fork. Drain.
- 2Heat oil in wok, stir-fry beef, in batches, until browned all over.
- 3Add beans to wok, stir-fry until almost tender. Add garlic, chilli and paste,stir-fry until fragrant. Add bok choy, stir-fry until just tender.
- 4Return beef to wok with stock, noodles and onion. Stir-fry until hot, add mint, toss well.
