Chilli beef and cashew stir-fry

This beef stir-fry recipe is so easy to whip up - slices of steak are stir-fried with veges and cashews and served with noodles and chilli jam

Ingredients

Chilli beef & cashew stir-fry
  • 1/3 cup cashews
  • 1 tablespoon vegetable oil
  • 500 gram beef fillet, sliced or beef stir-fry strips
  • 450 gram bag fresh stir-fry vegetable mix
  • 200 gram thick rice noodles, sliced, blanched
  • 200 gram tub chilli jam
  • 2 spring onions, shredded

Method

    Heat a wok or large frying pan on high. Add cashews and toss for 1-2 minutes until golden. Transfer to a plate.

    In same wok, heat oil on high. Stir-fry beef in 2 batches for 3-4 minutes each until sealed and browned. Transfer to a bowl.

    Add vegetable mix to wokand stir-fry for 2-3 minutes.

    Return beef to wok with noodles and chilli jam. Stir-fry for 2-3 minutes until hot. Serve sprinkled with spring onions and cashews.

Notes

✦ Prepare fresh noodles by placing in a colander, in a bowl, and pouring over hot water. Set aside for 1-2 minutes and use chopsticks to separate strands, then drain.
