Ingredients

Method

1.Heat butter and oil together in a large saucepan on high. Saute leek 3-4 minutes, until tender.
2.Add chicken and prosciutto. Cook 4-5 minutes, turning once, until beginning to brown. Blend in wine. Bring to the boil. Reduce heat to low; simmer 10 minutes.
3.Stir in gnocchi. Simmer, covered, 4-5 minutes, until tender. Remove from heat. Stir spinach and cheese through. Season to taste.
4.Serve sprinkled with extra crumbled gorgonzola. Accompany with salad.

Wine can be replaced with water, if preferred. You could use 8 chicken drumsticks in place of the thigh, if preferred.
