Ingredients

Chicken with gnocchi
  • 60 gram butter
  • 1 tablespoon olive oil
  • 1 small leek, finely sliced
  • 600 gram chicken thigh fillets, halved
  • 100 gram sliced prosciutto
  • 1 1/2 cup white wine
  • 2 cup (500g) gnocchi
  • 150 gram baby spinach
  • 80 gram gorgonzola cheese, crumbled, plus extra to serve
  • mixed salad, to serve

Method

Chicken with gnocchi

    Heat butter and oil together in a large saucepan on high. Saute leek 3-4 minutes, until tender.

    Add chicken and prosciutto. Cook 4-5 minutes, turning once, until beginning to brown. Blend in wine. Bring to the boil. Reduce heat to low; simmer 10 minutes.

    Stir in gnocchi. Simmer, covered, 4-5 minutes, until tender. Remove from heat. Stir spinach and cheese through. Season to taste.

    Serve sprinkled with extra crumbled gorgonzola. Accompany with salad.

Notes

Wine can be replaced with water, if preferred. You could use 8 chicken drumsticks in place of the thigh, if preferred.
