Chicken tacos with spicy cucumber salsa

Chicken tacos with spicy cucumber salsa
- 1 fresh corn cob
- 2 lebanese cucumbers, seeded, chopped
- 1 small red onion, finely chopped
- 1/2 bunch coriander, chopped
- 1 lime, grated zest, juice
- 1/2 long red chilli, thinly sliced (optional)
- 2 teaspoon woolworths select sweet chilli sauce or to taste
- 12 woolworths select taco shells
- 1/2 iceberg lettuce, shredded
- 2 tomatoes, sliced
- 1 barbeque chicken, meat shredded, bones discarded
- lime wedges, to serve
Method
Chicken tacos with spicy cucumber salsa
- 1Heat a chargrill pan on medium. Cook corn on all sides for 10-15 minutes. Using a sharp knife, remove corn kernels from cob.
- 2In a medium bowl, combine cucumber, onion, coriander, zest, juice, chilli and sweet chilli sauce together to make salsa. Season to taste.
- 3Heat taco shells following packet instructions.
- 4To serve, fill taco shells evenly with lettuce and tomato. Top with chicken and cucumber salsa. Sprinkle with corn. Serve accompanied with lime wedges.
Notes
Add chopped pineapple or mango to the salsa. Replace the sweet chilli sauce with a few drops of Tabasco.
