Chicken stroganoff with pasta

Rich and delicious, homemade chicken stroganoff is no-fail family favourite. It's easy to whip up and, served with pasta, it's guaranteed to fill tummies and please the tastebuds.

Chicken stroganoff with pasta
  • 50 gram butter
  • 375 gram portobello mushrooms, sliced
  • 1 onion, chopped
  • 1 clove garlic, crushed
  • 2 tablespoon tomato paste
  • 4 chicken thigh fillets, trimmed, sliced
  • 1 1/2 cup chicken stock
  • 1/2 cup sour cream
  • cooked pasta, parsley leaves, to serve

    In a large frying pan, melt butter on medium heat. Saute mushroom, onion and garlic for 5-6 minutes, or until tender. Add tomato paste and cook, stirring, 2-3 minutes.

    Mix in chicken and stock. Cook on medium heat for 5-10 minutes, stirring, or until chicken is cooked through and liquid is reduced by half.

    Stir sour cream through and simmer for 1-2 minutes, or until heated through. Season to taste. Serve with pasta and sprinkle with parsley.


Cook pasta in a large saucepan of boiling, salted water, following packet instruction.
