Ingredients

Chicken, rice and orange salad
  • 2 250g packets microwave brown rice
  • 1/4 cup coarsely chopped flatleaf parsley
  • 1/3 cup flaked almonds, toasted
  • 1/4 cup vegetable or olive oil
  • 2 tablespoon freshly squeezed orange juice
  • 1 bunch rocket, chopped
  • 2 oranges, segmented
  • 1/2 large barbecued chicken, skin and bones removed, shredded

    Heat rice as packet directs. Cool slightly. Add parsley, almonds, oil and juice to rice; stand 10 minutes.

    Add rocket, orange segments and chicken; toss to combine. Serve.
