Chicken meatball laksa

This fragrant soup is a fantastic idea for a quick dinner or lunch. With punchy flavours, homemade chicken meatballs and noodles to bulk it up, it's a delicious meal that will be on the table in just 30 minutes.

Ingredients

  • 1/2 tbsp vegetable oil
  • 2 tbsp red curry paste
  • 1 tbsp ground coriander
  • 400 ml coconut milk
  • 500 ml chicken stock
  • 1/2 tbsp fish sauce
  • 1 Makrut lime leaf
  • 400 g noodles
  • juice of 1 lime (optional)
  • chopped coriander, lime wedges, sliced chillies, to garnish (optional)
Meatballs
  • 2 slices bread
  • 500 g chicken mince
  • 2 tbsp lemongrass, finely chopped
  • 1/3 cup sweet chilli sauce
  • 3 tbsp soy sauce
  • a pinch of dried chilli flakes
  • 1/2 cup chopped coriander
  • a pinch of salt

Method

    Heat oil in saucepan; add curry paste. Cook gently 2-3 minutes, add coriander then mix in coconut milk, stock and fish sauce. Bring to a gentle simmer; add Makrut lime leaf.

    Make meatball mixture (see below). Scoop teaspoons of the mixture, form into balls with wet hands, then drop gently into simmering soup. Simmer 7 minutes until meatballs are cooked through.

    Prepare noodles according to pack directions. Divide into bowls; top with meatballs and soup. Add lime juice and top with garnishes, if using.

    Make bread into crumbs, either in a processor or grate into a bowl. Add meatball ingredients and mix well.

Notes

This dish is savoury and fragrant, but not super spicy. If you want more heat, add extra chilli to the curry paste. Makrut lime leaves – formerly known as Kaffir lime leaves – freeze well.
