Ingredients

Chicken marconi cheese
  • 50 gram butter
  • 1/2 cup (75g) flour
  • 3 cup (750ml) low-fat milk
  • 1 cup (120g) low-fat grated tasty cheese
  • 1 cup (80g) grated parmesan
  • 400 gram macaroni, cooked, kept hot
  • 1 small barbecue chicken, skin removed, flesh shredded
  • 310 gram can corn kernels, drained
  • mixed salad, to serve

Method

    Melt butter in a medium saucepan on medium heat. Stir in flour; cook 1 minute.

    Remove from heat and whisk in milk. Return to heat; cook, stirring, until sauce boils and thickens. Reduce heat; simmer 3 minutes.

    Stir in half of both cheeses until melted and combined. Preheat oven grill to high.

    Remove pan from heat. Add macaroni, barbecue chicken and corn; season to taste. Pour mixture into a large casserole dish; sprinkle with remaining cheese.

    Grill 4-5 minutes, until cheese is melted and golden brown. Serve with salad.

Notes

If preferred, prepare in advance and bake in a moderate oven, 180°C, 15-20 minutes, until hot.
