Chicken laksa

Ingredients

Chicken laksa
  • 200 gram rice stick noodles
  • 1 tablespoon vegetable oil
  • 3 green onions, sliced
  • 1 garlic clove, crushed
  • 1 red chilli, chopped
  • 185 gram jar laksa paste
  • 1 litre chicken stock
  • 400 millilitre lite coconut milk
  • 1 1/2 cup cooked chicken, sliced
  • 100 gram green beans, trimmed, halved
  • 1 cup bean sprouts
  • 1 tablespoon palm sugar, grated or brown sugar
  • 2 teaspoon fish sauce
  • 1 lime, juice
  • coriander leaves, sliced red chilli, lime wedges, to serve

Method

Chicken laksa

    Place noodles in a heatproof bowl. Cover with just-boiled water. Separate with a fork and drain well. Set aside.

    Meanwhile, heat oil in a large saucepan or wok on high. Sauté‚ onion, garlic and chilli for 1 minute.

    Add laksa paste. Cook, stirring, for 1 minute. Blend in stock and coconut milk. Bring to the boil, stirring. Reduce heat to low.

    Add noodles, chicken, green beans, bean sprouts, sugar, fish sauce and lime juice. Simmer for 1-2 minutes. Top with coriander and chilli to serve. Accompany with lime wedges.
