Method
Chicken fajitas
1.Place chicken in a large glass bowl. Add juice and half the oil; toss to combine. Add seasoning mix; toss to coat chicken. Cover with plastic food wrap; chill for 1 hour to marinate. Make Fresh Tomato Salsa as recipe directs.
2.Toss capsicum, onion and remaining oil in a medium bowl. Heat a char-grill pan or barbecue on high. Grill vegetables, in batches, for 3-5 minutes or until tender. Transfer to a heatproof bowl; cover with foil to keep warm.
3.Meanwhile, cook chicken on grill for 3-4 minutes each side or until cooked. Transfer to a heatproof plate. Cover with foil; rest for 5 minutes.
4.Arrange chicken and vegies on a platter. Serve at once with warm fortillas and salsa.

5.Combine ingredients in a small bowl.
You can use beef steak, such as scotch fillet, instead of chicken tendertoins. You can make your own fajita seasoning mix; combine 2 teaspoons each of ground cumin and coriander with 1/2 teaspoon chilli powder.
