Chicken, corn and avocado tacos

Homemade tacos are a family favourite, but have you made them with chicken and corn? Try this recipe for a new take on a old favourite.

Ingredients

Method

1.Preheat oven to 180°C.
2.Heat oil in a large frying pan on high. Saute capsicum and onion for 3-4 minutes, or until tender. Add chicken mince. Brown well for 4-5 minutes, breaking up lumps with the back of a spoon.
3.Add taco seasoning, stirring well. Mix in water and corn. Bring to the boil. Reduce heat and simmer for 2-3 minutes, or until slightly thickened. Gently stir through avocado.
4.Meanwhile, arrange tacos upside-down on a baking tray. Heat in oven for 3-5 minutes following packet instructions.
5.Fill tacos with mince mixture. Top with lettuce, cheese, salsa and sour cream.

You can use shredded chicken or beef mince in place of the chicken mince. If you like, use fresh corn kernels sliced raw from the cob.
