Method
1.Heat oil in a saucepan on high; saute onion and garlic 2-3 minutes, until golden. Add spice; cook, stirring, until aromatic.
2.Blend in tomatoes; cook 2 minutes. Stir in spinach leaves.
3.Meanwhile, microwave rice following packet instructions.
4.Add rice to pan with chicken, currants and almonds; cook, stirring, 1-2 minutes, until heated through. Serve with crusty bread.
Remove the skin from the chicken to reduce the fat content of the dish.
