Ingredients

Method

1.Dust chicken in seasoned flour, shaking off excess.
2.Heat oil in a large frying pan on high. Cook chicken for 4-5 minutes, turning, until browned. Transfer to a plate.
3.Saute leek and mushroom in same pan for 3-4 minutes until tender. Stir in wine. Simmer for 2 minutes until reduced by half.
4.Return chicken to pan with stock. Bring to the boil. Reduce heat to low and simmer for 25-30 minutes, until chicken is cooked through. Transfer chicken to a plate. Blend cream into sauce. Simmer for 3-5 minutes until thickened.
5.Meanwhile, heat butter in a small frying pan on high. Saute pear until golden and tender. Stir through sauce.
6.Return chicken to pan. Simmer, stirring, for 2-3 minutes until heated through. Stir through spinach until wilted. Serve with kumara mash.
