Method
1.Preheat oven to moderate, 180°C.
2.In a large frying pan, heat oil on high. Brown chicken 2-3 minutes on both sides . Transfer to a plate.
3.Arrange cooked potato in a large, greased casserole dish. Top with chicken followed with a layer of broccoli.
4.In a jug, combine soup, cream and mayonnaise. Pour over broccoli.
5.To make the topping: In a bowl, combine all ingredients.
6.Sprinkle topping evenly over casserole. Bake for 45 minutes, until chicken is cooked through and topping is crisp and golden. Sprinkle with parsley to serve.
This browning step of the chicken is optional. Layer the raw chicken as directed, if liked. To prevent overflow, place the casserole dish on an oven tray before baking.
