Chicken and broccoli bake

An easy go-to midweek meal that the whole family will love. Chicken and broccoli topped with tasty cheese make a delicious combination in this mouth-watering bake.

  • 1 cup panko breadcrumbs
  • 1/2 cup grated tasty cheese
  • 1/4 cup grated parmesan cheese
Chicken and broccoli bake
  • 2 tablespoon olive oil
  • 500 gram cut into chunks chicken thigh fillets
  • 3 peeled, boiled, thickly sliced potatoes
  • 1 broccoli head, cut into florets, blanched (or asparagus, 1 bunch, trimmed, halved)
  • 420 gram can creamy chicken soup
  • 1/2 cup sour cream
  • 1/4cup mayonnaise
  • chopped parsley, to serve

    Preheat oven to moderate, 180°C.

    In a large frying pan, heat oil on high. Brown chicken 2-3 minutes on both sides . Transfer to a plate.

    Arrange cooked potato in a large, greased casserole dish. Top with chicken followed with a layer of broccoli.

    In a jug, combine soup, cream and mayonnaise. Pour over broccoli.

    To make the topping: In a bowl, combine all ingredients.

    Sprinkle topping evenly over casserole. Bake for 45 minutes, until chicken is cooked through and topping is crisp and golden. Sprinkle with parsley to serve.


This browning step of the chicken is optional. Layer the raw chicken as directed, if liked. To prevent overflow, place the casserole dish on an oven tray before baking.
