Method

1.Rinse rice in cold water until water runs clear; drain. Place in a medium heavy-based saucepan with 3 cups water. Bring to the boil, stirring. Reduce heat; simmer, covered, for 12 minutes or until water is absorbed. Remove from heat. Stand for 5 minutes (don’t lift lid). Spread in a baking dish. Drizzle with sushi seasoning; stir to combine. Cover rice with a damp tea-towel. Cool.
2.For each roll, place a sheet of nori on a flat surface. Using a wet spoon, spread an eighth of the rice over sheet, leaving a 2cm border. Top with an eighth, each, of the avocado and the chicken. Roll nori tightly to enclose filling. Cover with plastic food wrap; chill for 15 minutes. Serve with soy sauce.
