Chewy citrus and almond squares
  • 150 gram butter, softened
  • 150 gram (about 2/3 cup) sugar
  • 1 egg, lightly beaten
  • 200 gram (about 1½ cups) flour
  • 115 gram ground almonds
  • 1/2 cup brown sugar, loosely packed
  • zest and juice of 1 orange, plus 1 lemon

  • 1
Preheat oven to 150°C. Line a 23cm x 23cm tin with baking paper.
  • 2
Cream the butter and sugar, then add ½ the egg and mix. Add the flour and combine.
  • 3
Press half of the mixture firmly into the baking tin.
  • 4
For the filling, mix all the ingredients together, then spread evenly over the base. Cover with the remaining mixture.
  • 5
Glaze the top with the reserved beaten egg. Bake for 30 minutes or until the top is firm and golden.
  • 6
    Slice when cooled.

  • Glazing the top with egg wash gives this slice a beautiful golden shine – like a cheat’s baklava.
