Method
1.Preheat oven to 150°C. Line a 23cm x 23cm tin with baking paper.
2.Cream the butter and sugar, then add ½ the egg and mix. Add the flour and combine.
3.Press half of the mixture firmly into the baking tin.
4.For the filling, mix all the ingredients together, then spread evenly over the base. Cover with the remaining mixture.
5.Glaze the top with the reserved beaten egg. Bake for 30 minutes or until the top is firm and golden.
6.Slice when cooled.
Note
- Glazing the top with egg wash gives this slice a beautiful golden shine – like a cheat’s baklava.
