Chewy apricot and coconut granola bars

Method

1.Preheat the oven to 180°C. Line a 28cm x 18cm slice pan with baking paper.
2.Combine the sugar, honey, butter and peanut butter in a saucepan over a medium heat. Cook, stirring at times until the mixture comes to the boil. Allow to boil for 2 minutes before removing the pan from the heat.
3.Combine the remaining ingredients in a large bowl, pour in the syrup and mix well.
4.Press the mixture firmly into the lined slice pan; it will be sticky so use wet hands or a sheet of baking paper to press with.
5.Bake for 15-20 minutes until golden brown.
6.To make the drizzle, mix together the icing sugar, yoghurt and vanilla in a small bowl. Lightly flick the drizzle over the cooled slice.
7.Once the drizzle has set, cut into 14 bars (about 9cm x 2cm).
