Cherry chews
This deliciously sweet and indulgent recipe for cherry chews pairs dark choc chips and glace cherries with lovely coconut! It's a slice that's perfect enjoyed for afternoon tea with a hot cuppa

Ingredients
Cherry chews
- 1 cup self-raising flour, sifted
- 1/2 cup brown sugar
- 1/2 cup desiccated coconut
- 100 gram butter, melted
- icing sugar to dust
Topping
- 1/2 cup caster sugar
- 100 gram glacé cherries, halved, plus 100g extra
- 1/2 cup flaked almonds, chopped, plus 2 tablespoons extra
- 1/2 cup shredded coconut
- 1/3 cup dark chocolate chips
- 1/4 cup self-raising flour
- 2 eggs, beaten
- 1 teaspoon vanilla extract
Method
Cherry chews
- 1Preheat oven to 180°C. Lightly grease and line an 18 x 28cm slice pan.
- 2In a large bowl, combine flour, sugar and coconut. Stir in butter until fully combined. Press mixture firmly into base of pan (see recipe tip).
Topping
- 3In a large bowl, combine all the ingredients. Spread mixture over base, then sprinkle extra cherries and almonds over. Bake for 25-30 minutes until light golden brown. Allow to cool on tray.
- 4Cut into squares and dust with icing sugar, if desired.
Notes
- A fork or potato masher can be used to press base into pan. - Store cherry chews in an airtight container.
