Cherry and almond blondies

Budget priced, these white chocolate brownies are delicious with morning or afternoon tea or with a cup of coffee after dinner. But be warmed - you won't be able to stop at one!

Method

1.Preheat oven to 180°C (160°C fan-forced). Grease and line an 18cm x 28cm (base measurement) slice pan with baking paper, extending paper 2cm above edge of pan.
2.Melt butter and chocolate in a medium saucepan over low heat until smooth. Remove from heat. Set aside for 5 minutes to cool. Add sugar, egg and sifted flours to chocolate mixture. Stir to combine. Spread in prepared pan. Scatter with cherries and almonds.
3.Bake for 25-30 minutes or until edges are firm and top is browned lightly. Cool in pan. Cut into 12 pieces.

Instead of almonds, you can use toasted chopped hazelnuts or walnuts. Frozen cherries can be replaced with raspberries or drained canned cherries.
