Cherry and lemonade fools
Cherries are gently stewed in lemonade and layered with lemon curd, cream and coconut for this silky cherry fool recipe

Ingredients
Cherry amp lemonade fools
- 225 gram (7 ounces) fresh cherries
- 4 cherries on the stem
- 1/3 cup (80ml) lemonade
- 300 millilitre thickened (heavy) cream
- 1/3 cup (110g) ready-made lemon curd
- 1/3 cup (15g) toasted coconut flakes into cream
- 1 tablespoon extra toasted coconut
Method
Cherry amp; lemonade fools
- 1Pit fresh cherries, reserving 4 cherries on the stem to serve. Place pitted cherries and lemonade in a small frying pan over high heat, bring to the boil. Reduce heat, simmer 5 minutes, mashing with a fork a few times during cooking, or until cherries soften slightly and liquid thickens slightly.
- 2Cool. Meanwhile, beat cream in a small bowl with an electric mixer until soft peaks form. Fold lemon curd and coconut flakes into cream. Spoon three-quarters of the cherry mixture onto cream mixture, do not stir.
- 3Spoon cream mixture into four ⅔ cup (160ml) glasses. Top with remaining cherry mixture, reserved cherries and extra toasted coconut
Notes
Cherry mixture can be made a day ahead; refrigerate in an airtight container. Lemon curd is available from supermarkets
