Cheesy veggie pasta bake
  • 350 gram elbow pasta or macaroni
  • 60 gram butter
  • 1/3 cup plain flour
  • 3 cup milk
  • 1 1/2 cup frozen peas, corn and carrot mix
  • 2 cup pizza cheese

Method

    Cook pasta in large saucepan of boiling salted water according to packet instructions. Drain well and set aside.

    Meanwhile, melt butter in medium saucepan on high. Stir in flour. Cook, stirring, 1 minute. Remove from heat.

    Gradually stir in milk until smooth. Return to heat and cook, stirring, 1- 2 minutes, until mixture boils and thickens.

    Reduce heat to low, simmer 3 minutes. Fold in pasta, veggies and 1 cup of cheese. Season to taste.

    Preheat grill to hot. Pour mixture into 4 x 1 cup ramekins. Sprinkle with remaining cheese.

    Grill, 8-10 minutes, until cheese is melted and golden.
