Cheesy sausage, spinach and ravioli bake

  • 6 good herby sausages
  • 1 onion, chopped
  • 2 clove garlic, crushed
  • 2 cans chopped tomatoes
  • 1 tablespoon tomato paste
  • 1/2 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1 teaspoon beef stock dissolved in 1 tablespoon of hot water
  • 3/4 cup frozen spinach, defrosted, or 3 cups fresh chopped spinach
  • 300 gram pack of meatless ravioli or tortellini – spinach and ricotta works well
  • 1 cup grated mozzarella
  • 1/4 cup Parmesan cheese
  • salt and pepper

    Preheat the oven to 210°C.

    Split the skins of the sausages and squeeze the filling into a frying pan. Crumble with a potato masher and cook until sealed.

    Add the chopped onion and garlic to the pan and cook until soft.

    Add the tinned tomatoes, tomato paste, oregano, thyme, beef stock and spinach and bring to a simmer.

    Separate the ravioli pieces so they are not stuck to each other and add to the sauce. Season well with salt and pepper and when simmering, pour into an ovenproof dish or into individual ramekins if you prefer.

    Top with the grated mozzarella and parmesan cheese.

    Bake in the preheated oven 30 minutes until golden and bubbling. Stand for a few minutes before serving.
