Cheesy frittatas

These cheesy cauliflower and pea frittatas are easy to make and super tasty. Enjoy them hot with a side salad or straight from the fridge as a nutritious on-the-go snack.

Method

1.Preheat oven to 180°C (160°C fan-forced). Grease a 12-hole, 1/3-cup muffin pan.
2.Steam cauliflower in microwave on high, 4-5 minutes. Cool. Combine with remaining ingredients in a bowl. Spoon into prepared pan. Bake 10-15 minutes, until firm. Serve warm.

Try using broccoli instead of cauliflower, or half and half.
