Cheesy corn on rye
  • 310 gram can corn kernels, rinsed, drained
  • 2 tablespoon low-fat ricotta cheese
  • 40 gram baby spinach leaves
  • 2 slice (90g) rye bread, toasted
  • freshly ground black pepper and salt, to season

Method

Cheesy corn on rye

    Heat corn in a medium microwave-proof bowl in microwave oven on HIGH (100%) for about 30 seconds; stir in cheese and spinach. Season to taste.

    Serve toast topped with corn mixture.

Notes

Toast is best "done" on one side only for this kind of topping.
