Ingredients
Cheesy corn on rye
- 310 gram can corn kernels, rinsed, drained
- 2 tablespoon low-fat ricotta cheese
- 40 gram baby spinach leaves
- 2 slice (90g) rye bread, toasted
- freshly ground black pepper and salt, to season
Method
Cheesy corn on rye
- 1Heat corn in a medium microwave-proof bowl in microwave oven on HIGH (100%) for about 30 seconds; stir in cheese and spinach. Season to taste.
- 2Serve toast topped with corn mixture.
Notes
Toast is best "done" on one side only for this kind of topping.
