Method
1.Slice the chicken breast into long, even-sized strips. Place the beaten eggs in a shallow bowl. Combine the flour and seasoning in another bowl. In the last bowl, combine the Parmesan, breadcrumbs and rosemary. Dip each chicken strip into the seasoned flour, then the egg, then coat generously in the crumbs. Chill until ready to cook.
2.Heat enough oil to come 2-3cm up the sides of a small-to-medium frying pan or saucepan. Add 2-3 chicken strips at a time and cook for 4-5 minutes until golden and cooked through. Keep warm and repeat with the remaining chicken. Alternatively, you can arrange the strips on a lined tray and spray with oil, then bake for 15-20 minutes at 180°C, turning once until coloured and cooked through.
3.Serve the chicken strips with wraps and roll up with your favourite salad ingredients and sauces.
