Preheat oven to 180°C (160°C fan-forced). Grease and line a 23cm square cake pan.

Using an electric mixer, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
  • 3
Add vanilla. Fold in flour and milk alternately, starting and finishing with flour. Spread half of the batter over base of prepared pan. Bake 10 minutes, until cake springs back when touched.
  • 4
Meanwhile, make filling: use an electric mixer to beat all ingredients until smooth.
  • 5
Spread vanilla filling over cake base. Carefully drop spoonfuls of remaining cake batter over filling. Use a small metal spatula to smooth surface. Bake 40-45 minutes, until a skewer inserted comes out clean. Cool in pan. Slice and serve.

Be very careful when spooning over the remaining batter so it doesn't sink into the cottage cheese mixture.
