Cheesecake slice
The classic cheesecake is transformed in this recipe to create a beautifully sweet and creamy slice. Enjoy a piece of this indulgent dessert with a pot of your favourite coffee as an afternoon treat.

Cheesecake slice
- 125 gram unsalted butter, at room temperature
- 1 cup (220g) caster sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cup (225g) self-raising flour
- 1/2 cup (125ml) milk
Filling
- 2 1/2 cup (500g) cottage cheese
- 300 millilitre thickened cream
- 3 eggs
- 1/4 cup (55g) caster sugar
- 1 tablespoon self-raising flour
- 1 teaspoon vanilla extract
Method
Cheesecake slice
- 1Preheat oven to 180°C (160°C fan-forced). Grease and line a 23cm square cake pan.
- 2Using an electric mixer, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition.
- 3Add vanilla. Fold in flour and milk alternately, starting and finishing with flour. Spread half of the batter over base of prepared pan. Bake 10 minutes, until cake springs back when touched.
- 4Meanwhile, make filling: use an electric mixer to beat all ingredients until smooth.
- 5Spread vanilla filling over cake base. Carefully drop spoonfuls of remaining cake batter over filling. Use a small metal spatula to smooth surface. Bake 40-45 minutes, until a skewer inserted comes out clean. Cool in pan. Slice and serve.
Notes
Be very careful when spooning over the remaining batter so it doesn't sink into the cottage cheese mixture.
